Sideritis bilgerana P.H. Davis enriched poly (vinyl alcohol)/chitosan nanofibers: An innovative and green strategy for antioxidant and antibacterial food preservation

Özet

Electrospun poly (vinyl alcohol)-chitosan (PVA-CS) nanofiber scaffolds incorporating Sideritis bilgerana P.H. Davis (SB) extract were fabricated as bioactive materials for active food packaging. The extract, rich in phenolic compounds, was added at 5-15% (w/w) to the PVA-CS matrix. Structural analyses (FT-IR and LC-MS/MS) verified successful integration of phytochemicals, while SEM revealed uniform nanofibers with tunable wettability. Thermal analysis (TGA, DSC) showed improved stability at optimal extract levels. Antioxidant activity (DPPH, ABTS) increased with extract concentration, and PVA–CS–SB-15 exhibited the highest radical-scavenging capacity. The nanofibers also showed good antibacterial activity against Enterococcus faecalis, Staphylococcus aureus, and Pseudomonas aeruginosa. When applied as coatings, SB-enriched scaffolds effectively delayed strawberry spoilage and reduced weight loss. These results demonstrate that Sideritis bilgerana-loaded PVA-CS nanofibers provide a sustainable, antioxidant, and antimicrobial strategy for extending the shelf life of perishable foods.
